A restaurant serving modern Nordic cuisine that was established in 1987. Aquavit has acquired two stars in Michelin Guide in New York City by its creative and distinctive menu from incorporating French technique into Nordic cuisine. In July of 2017, “Mr.Takashi Chiba” assumed the role of the new executive chef.

Executive Chef

Takashi Chiba moved to France and worked at many famous restaurants, including; the traditional restaurant L’Esperance in Vezelay in Bougogne, L’Auberge de L’ill in Lyon, and the prestigious and traditional Le Taillevent. After returning from France, he worked at Edition Koji Shimomura. Chiba was appointed as the executive chef at AQUAVIT in July 2017.
